INGREDIENTS
- 5 Large, Pasture-Raise Eggs, Whisked
- 1 Banana, Mashed
- ¼ Cup Ghee, Melted
- 2 Tbsp. Coconut Oil, Melted
- 1 Cup Almond Flour
- 2 Tbsp. Coconut Flour
- 1.5 Scoops Collagen Peptides*
- 1 Tbsp. Almond Extract
- 1 Tsp. Cinnamon
- ½ Tsp. Baking Soda
- 1 Cup Zucchini, Packed & Grated
DIRECTIONS
- Preheat oven to 375 degrees F. Combine eggs with cooled ghee and coconut oil in a small mixing bowl, gently whisking to incorporate all ingredients. Mix in the banana.
- In a separate bowl, combine almond and coconut flour, collagen peptides, baking soda, and cinnamon. Add dry ingredients to wet ingredients, and mix thoroughly until combined. Add almond extract.
- Pat zucchini with a towel to ensure dryness. Then add zucchini into the mixture.
- Scoop portions into 1/8 cup muffin portions using a muffin tin.
- Bake for 25 minutes & enjoy!
